Chocolate Cookies GF

A rich, chocolatey, naturally gluten free cookie? Yes please! This cookie became a thing because of one of my students. I used to bake at least once a trimester for my students. Usually it was cupcakes, sometimes cookies. This was before we discovered my husband and daughter were gf, so I never thought about that. My student and I were talking and he mentioned that he could never have the treats others brought in because he was gluten free. SO that made me sad and I started making these just for him. He had his own batch of treats! AND they are really good!
They are kind of macaron, meringue cookie meets chocolatey gooey goodness. They are crispy on the outside and soft on the inside with melty chocolate chips. And everyone loves them. I make them for grad parties, get togethers, neighbor treats, just about everything because they are simple and simply yummy.
They do need a resting time after they are scooped onto the baking sheets!! This is imperative or they will spread too far and not be awesome. So plan ahead!
Gluten free chocolate cookies
Oven at 350 degrees
Line baking sheets with parchment paper. These are a little stick-to-the-sheet so paper up!
In mixer bowl combine:
3 c powdered sugar
2/3c cocoa
1/2 tsp salt
3 egg whites (save those yolks and make noodles or pudding!)
1 tsp vanilla
This batter will be kind of pancake-ish, more liquid than regular cookie dough
Fold in 1/12 c chocolate chips -ok-- in the spirit of honesty--I never "fold in" choc late chips. I throw those bad boys right into the mixer and let it go, usually as it is running and then they fly all over the kitchen....
Scoop the cookies onto lined baking sheets. I only put 7-8 cookies on a sheet because they will spread.

LET REST leave the sheets for about 20-30 minutes BEFORE baking. Like macarons, they will form a "skin" on the top --this will help them crisp up and keep them from spreading too much. This is when I preheat the oven-during rest time

AFTER the resting time, Bake cookies 10-12 minutes.
Cool on cookies sheet about 10 minutes. Then I slide the whole parchment paper onto the counter and let them cool completely before taking off the paper. You can see in this picture if you put too many on a sheet they end up "Kissing". They taste the same, so if they want a little PDA, that's fine!
